A classic bottle fermented style with upfront citrus and strawberries combined with a hint of cream biscuit and yeasty notes.
This wine is made in the traditional method from a blend of 60% Pinot Noir and 40% Chardonnay handpicked from our Carey Gully Vineyard. The best juice was set aside and fermentation occurred in vat. Once completed we hand bottled with yeast and sugar to create the elegant bubbles. We then let the wine age for a minimum 18 months on lees known as tirage. This wine is bottle fermented and has been progressively hand disgorged on demand.
